Super Bowl has to be one of the most calorie-dense days of the year - maybe next to or more than Christmas even. The pizza, nachos, wings, subs, chili, meatballs, pulled pork, spinach and artichoke dip, and guacamole by the boatload. Can you believe that100 million pounds of chicken wings are consumed on Super Bowl Sunday alone–that's more than 1.25 BILLION individual wings. Oh and beer. By the pitcher or keg at least! Why didn’t salad ever make it to the list of Super Bowl foods? *ducking as you throw your wings at me*
How can you healthify your Super Bowl Sunday? Load up on the celery and carrot sticks, ease up on the ranch or blue cheese dip, bake your own wings by tossing them in a herb rub (try out my Mediterranean herb rub, recipe below) instead of loading on the sauce. Nachos can have some veggies piled into them and while we know guac is good for you, have that dip and hummus on offer rather than the spinach and avocado dip.
Mediterranean Herb Rub
*Makes about 1 cup.*
3 tablespoon dried tarragon
3 tablespoon dried oregano
3 tablespoon dried dill
3 tablespoon dried thyme
3 tablespoon dried rosemary
3 tablespoon coarse salt
2 tablespoon lemon pepper
1 tablespoon garlic flakes
Combine all the ingredients in a small bowl and stir to mix. Store the rub in an airtight jar away from heat and light. It should keep for at least 6 months. Use 2 to 3 teaspoons per pound of meat.
